Sweeten your life with dates! Gooey, delicious dates not only tempt your mouth with luxurious sweetness, but according to Ayurveda, these delightful fruits also makes you — and those you share them with — more affectionate and kinder (and who doesn’t want more of that around?) Naturally sweet and full of nutrition, this recipe adds a boost with antioxidant-packed nuts, warming spices and just a touch of, well, ghee.
INGREDIENTS
- 4 cups pitted dates
 - 2 cups total, almonds and/or pistachios
 - 1.5 TB ghee
 - 1 cup shredded dry coconut
 - 2/3 tsp nutmeg
 - 1/2 tsp cinnamon
 - 1 tsp ginger powder
 - 1/2 tsp Himalayan sea salt
 - 2/3 tsp cardamom powder
 
INSTRUCTIONS
- Cut nuts into small pieces and dry roast them for 1-2 minutes on medium flame
 - Heat ghee in a non stick pan and add dates. Cook on a low heat, stirring the dates and pressing down until they become a soft paste.
 - Add chopped nuts and spices and mix everything well
 - Rub a little ghee to your palm and shape into one inch balls. (While rolling your hands may become sticky due to the sugar in the dates – just rinse your hands with cold water and you will be able to handle the mixture easily again.)
 - Roll balls in coconut. Set aside to cool.
 - Store them air tight containers. Dates roll stays fresh for about two weeks at room temperature.
