Especially when paired with softer flavors like cashew and coconut that lend a hand, but let the turmeric do the talking (if you know what I mean).

INGREDIENTS

1 cup gluten-free oats

½ cup raw cashews, soaked overnight

8 Medjool dates

1 tablespoon chia seeds
-
1½ teaspoon Elemental Alchemy’s Spiced Golden Milk (alternatively, 1 teaspoon turmeric + pinch of black pepper)

4 tablespoons lemon juice
-
1 teaspoon lemon zest
-
1 teaspoon vanilla extract
-
½ cup shredded coconut
INSTRUCTIONS

De-pit the dates and soak in hot water until the flesh begins to soften. Strain and set aside the water.

Place dates in a food processor and blend. Add in the other ingredients and whip until mixture turns into a dough-like consistency.

If the mixture looks/feels dry, add in the saved date water little by little.

Rolling between your hands, shape the dough into 1-1½ inch balls, then roll in shredded coconut and place on a lined baking sheet.

Place baking sheet in the fridge for 2-3 hours to settle before storing a glass airtight container.
