DESCRIPTION
Kitchari, pronounced kich-ah-ree, is a delicious yet simple porridge-like blend of beans & rice. It is often referred to as Indian comfort food with some added benefits: creates a complete amino acid chain that easy to digest, increases digestive capacity and supports detoxification, is gentle enough for everyone. Which is why it is one of the first foods give to children and is also used to heal the sick and provide sustenance during detoxification & deep spiritual practices.
INSTRUCTIONS
To make, you will need the following:
- 1 tablespoon Kitchari Spice Mix
- 1 cup basmati rice
- ½ cup yellow mung daal
- 1½ tablespoon ghee (or coconut oil)
- 6 cups water
- optional: 1-2 cups mixed veggies
In a medium saucepan warm the ghee. Add the Kitchari Spice Mix and sauté for one to two minutes. Then add the rice and mung dal and sauté for another couple of minutes. Next, add 6 cups of water and bring to a boil before turning heat to low, covering and cooking for 30-45 minutes. Stir now and then to prevent sticking. If adding vegetables, stir them in half way through cook time. The ideal consistency is similar to oatmeal so add more water if needed. Allow to saucepan to cool slightly before serving. Serves 4.
