Spirulina is the most complete food, containing all essential amino acids, including gamma linoleic acid (GLA), vitamins, minerals (it’s very high in calcium) as well as chlorophyll (great detoxifying properties). Basically, it is a total superfood, loaded with vitamins, minerals, antioxidants . . . yes, the list is almost endless! It’s quite powerful and only needs the support of a few simple ingredients to make it a go-to, guilt-free “treat”.
Creamy in texture and ready in no time, they’re the perfect snack to have on hand for those afternoon energy slumps. They’re also great to enjoy with a little almond milk for a not-so-sweet dessert!
INGREDIENTS
- 1 cup cashews
- 2 TB coconut oil, melted
- 1 TB almond butter
- 3-5 dates, pitted and coarsely chopped
- Pinch of coarse salt
- 1.5 TB unflavored protein powder (I like Vital Protein)
- 1.5 TB spirulina
- Desiccated coconut (for coating)
INSTRUCTIONS
- Roast the cashews at 400°F for about 3 minutes until golden brown.
- Pour the cashews into the food processor and blend until they become a coarse flour.
- Add the spirulina, salt, protein and chopped dates. Pulse to combine.
- Add the melted coconut oil and almond butter and blend until combined.
- Use your hands to squeeze and roll the mixture tightly into balls.
- Scatter some desiccated coconut out on a flat surface and roll the balls in it to coat.
- Take along for a nourishing, protein-rich snack anytime, anywhere.
- Store the rest in cool place.
